Brown Brothers Prosecco Scones

If you love scones but don’t want to spend half your life rubbing the butter into the flour, then these easy Prosecco Scones are the answer. Light and fluffy, these scones taste wonderful served with strawberry jam. And, as the folks at Brown Brothers say, they are “best paired with, naturally, more bubbles!”

This Prosecco is best enjoyed young while it's still light. Expect delicate aromas of apple and pear, with a palate that bursts with crisp citrus notes.

Ingredients

  • 4 cups 4 cup (600g) self-raising flour

  • 300 ml 1 1/4 cup thickened cream

  • 300 ml 1 1/4 cup Brown Brothers Prosecco NV

  • Extra Extra self-raising flour, to dust

  • Strawberry jam, to serve (see notes)

  • Extra Extra thickened cream, whipped, to serve

  • Fresh strawberries, hulled, sliced, to serve (optional)

Method

  • Preheat oven to 200°C fan-forced. Line a baking tray with baking paper. Sift flour into a large bowl. Add cream and Prosecco, then mix together with a fork until just combined and smooth.
  • Pat dough on a well-floured board into a round about 2cm thick. Cut with a floured scone cutter, and place on the prepared baking tray close together.
  • Bake scones for 10-12 minutes or until lightly golden. Cool on tray.
  • Serve with strawberry jam, a dollop of whipped cream, strawberries (if desired), plus glasses of Prosecco to drink!

Notes

  • Instead of strawberry jam, you can serve these scones with raspberry jam, if you prefer. If you happen to be at Brown Brothers, you may be able to purchase a jar of wine-infused jam from the Milawa Cellar Door. It is a small-batch, artisanal product made in collaboration with local producers.
