This smoked salmon platter looks and feels fancy, but is practically effortless to pull together.

No cooking, no complicated prep – just a handful of good-quality ingredients layered in a way that somehow makes you look like you’ve done it a million times before. Silky smoked salmon on a bed of zesty cream cheese, briny capers and a tumble of fresh greens – it’s fresh, generous and just the right side of indulgent.

This is the sort of platter you put down in the middle of the table with some warm bread and let everyone help themselves, preferably with a glass of something cold within reach.

I love the lemon-infused cream cheese, but if you like a bit more tang, simply add 1/2 tsp horseradish cream to the mixture. You could also stir in some chopped capers.

Ingredients

  • 250 g 1/2 lb block cream cheese, softened

  • 1 tsp 1 tsp lemon zest

  • 1 tbs 1 tbsp fresh lemon juice

  • 300 g 2/3 lb good-quality smoked salmon

  • 1/2 cup 1/2 cup drained capers

  • Handful of pea shoots (or assorted microgreens or snow pea sprouts)

  • Lemon wedges, to serve

  • Crusty bread, crackers and/or warmed mini blinis, to serve

Method

  • To make the zesty cream cheese base, mix cream cheese, lemon zest and lemon juice in a bowl until well combined.
  • Spoon one-third of the cream cheese mixture into a small serving bowl. Spread remaining mixture over a serving plate – don’t worry about making it too neat.
  • Drape smoked salmon over the top of the cream cheese layer in soft folds, letting it fall naturally rather than placing it too precisely – that relaxed look is what makes it feel abundant.
  • Place half the capers in a small serving bowl and place bowl next to the salmon on the plate. Place small bowl of cream cheese mixture alongside. Scatter remaining capers over the plate and season generously with freshly cracked black pepper.
  • Arrange pea shoots or herbs in the centre of the platter. Add lemon wedges to the side and serve immediately with bread, crackers and/or blinis.

Notes

  • Swap the microgreens for avocado slices or shaved fennel for extra freshness, if you like.
