I often find that some in my family want a chewy Anzac, while others prefer their biscuits crisper and crunchier. So, here’s a recipe that will satisfy both camps. These biscuits strike that perfect balance – crispy golden edges and a soft, chewy centre.

What creates this perfect balance is the sugar. The combo of caster sugar and brown sugar is the secret to the perfect Anzac and the ideal chew and crunch ratio.

Ingredients

  • 1 cup 1 cup plain flour

  • 1 cup 1 cup rolled oats (whole oats, not instant)

  • 1 cup 1 cup desiccated coconut

  • 1/2 cup 1/2 cup brown sugar, firmly packed

  • 1/2 cup 1/2 cup caster sugar

  • 125 g 4 2/5 oz butter, chopped

  • 2 tbs 6 tsp golden syrup

  • 1/2 tsp 1/2 tsp bicarbonate of soda

Method

  • Preheat oven to 160°C fan-forced. Line 2 baking trays with baking paper. Combine flour, oats, coconut, brown sugar and caster sugar in a mixing bowl.
  • Place butter, golden syrup and 2 tbs water in a small saucepan over medium heat. Cook, stirring, for 2 minutes or until melted and smooth. Remove pan from the heat and stir in bicarb. Pour into the oat mixture and stir until well combined.
  • Use clean hands to roll tablespoons of the mixture into balls. Place on the prepared trays 5cm apart. Flatten slightly. Bake, swapping trays around halfway, for 15 minutes or until light golden on top. Cool on the trays for 15 minutes.
  • Transfer biscuits to wire racks to cool completely before serving.

Notes

  • Prefer chewier Anzac biscuits? You can make these biscuits more chewy by leaving out the brown sugar and increasing the caster sugar to 3/4 cup.
  • I used quality Uncle Toby’s Traditional Rolled Oats for this recipe.
